INGREDIENTS
4 tbsp Oil (Canola or Vegetable)
2 cups diced yellow onion
1 lb Baby Okra cut lengthwise
1 ½ tsp Mango Powder
1 ½ tsp Coriander, ground
1 tsp Cumin, ground
1 ½ tsp Fennel Seed, ground
1 ½ tsp Turmeric
1 ½ to 2 tsp salt, to taste
3/4 tsp to 1 tsp of cayenne, to taste
Chopped cilantro leaves
STEP 1
Cut the okra on both ends and cut into ½” pieces. You can also split them down the middle. Do not use thick pieces of okra with big seeds. Baby okra works the best for this recipe.
STEP 2
Heat the oil in a heavy bottom pan and sauté the onions until caramelized and golden brown. Usually takes 8-10 minutes on medium heat.
STEP 3
Add the okra and sprinkle with the mango powder. Cook together till the okra is bright green.
STEP 4
Add the other dry ingredients and cook on low heat till the okra is tender. It will will turn a darker color and will shrink in size. Garnish with chopped cilantro and serve with naan or rice.
